These Mini Pancakes are perfect if you’re hosting a little brunch or simply looking for a new way to serve a classic breakfast treat. I used my favorite homemade pancake recipe [that can originally be found here] which requires nothing more that simple ingredients you have at home – flour, sugar, baking powder, an egg, and milk. This recipe makes about 40 mini pancakes and I did 4 pancakes per skewer. I would recommend finding the bamboo skewers rather than using tall toothpicks like I did because they will stay on the thicker skewer a little better. Put them on a serving tray with a little dish of syrup for dipping and there you have it! Pancakes that don’t even require a fork and knife. Sounds good to me

Ingredients
- Original idea from Nugget Markets
- ¾ cup flour
- ¼ cup sugar
- 1 teaspoon baking powder
- Pinch of salt
- 1 egg
- ¾ cup milk
- Handful of rinsed berries of your choice
- Bamboo skewers
- Confectioners' sugar for dusting
- In medium mixing bowl, mix flour, sugar, baking powder, and salt.
- Add egg and milk, whisk until smooth.
- In a pan/griddle on medium heat, melt a little butter. Wait for pan/griddle to get very warm.
- Scoop just under 1 tablespoon of batter onto hot pan/griddle.
- Flip pancakes when batter has bubbled.
- Allow pancakes to cool slightly. Stack in groups of 3-5, top with berry, add skewer through berry and pancakes. Sprinkle with confectioners' sugar.
